Preheat oven to 450 degrees. Chop zucchini in 1 inch chunks. Mince all herbs and garlic. Dice red onion. Add all herbs, zucchini, garlic and onion to 9 x 13 baking dish. Coat with olive oil, salt and pepper and mix well. Stir in canned tomatoes.Baked uncovered in 450 degree oven for 15 minutes, stir, then return to oven to bake for another 10 minutes.
