saute the veggies except the avacado in 1 T. Olive Oil for about 5 minutes...you want just the crunch of the veggies gone..NOT COOKED!!! keep a slight crunch left on the veggies. salt and pepper to taste...I like to use kosher salt for this and LOTS of pepper!!! removed from heat let cool a little or if your going to eat cold put in fridge till chilled, then right before your ready to eat add the juice of 1 lemon, the feta cheese and the diced avacado and gently mix together....if you wanted to make this a meal I think adding a can of black beans would be yummy too!!Number of Servings: 6Recipe submitted by SparkPeople user BEEHIVEBABY.
