6) Lemon juice - from half a lemon
7) Salt to taste
8) Cranberry juice - 1 tsp

Here is how you make Simple Onion and Tomato Salad:

1) Thinly slice the onions and add to chopped tomatoes.2) Crush the parsley with the cranberry juice until it becomes more of a green paste (I used a pestle and mortar, I find it retains the flavour better than a food processor)3) Add the other ingredients to the green paste and whisk for about a minute4) Add to the onions and tomatoes and toss.You can add other vegetables to the salad, I found the cranberry juice lightened the bite of the raw onions (something I really detest).This made 4 1/2 cup servings for us.
