The added raw garlic isn't very overbearing and gives it a nice twist in flavor while the carrots are sweet and the tomatoes are juicy.

This salad is gluten free, diabetic friendly, and vegan. Yes, avocados are high in fat however, this is not the kind of fat that creates weight gain- avocados are known to aid in weight loss.

Appx 3 carrots
2 whole garlic cloves
Half of an avocado
A pinch of lemon juice (2-5 ml appx)
A pinch of dried garlic (appx 5 ml)
1/4 a fresh tomato
1 green onion
Dash of sea salt or specifically, celtic sea salt
