1 green bell pepper chopped into larger pieces
1 red bell pepper chopped into larger pieces
1/2 yellow onion chopped into larger pieces
3 green onions - chopped
4 Tbsp fresh parsley chopped
1 tsp dried terragon
2 Tbsp lemon juice
2 Tbsp Olive oil
2 Tbsp Champagne Vinegar
1 Clove fresh minced garlic

Here is how you make Chickpea and Roasted Vegetable Salad:

Prep ingredients. In a bowl combine all ingredients except bell peppers and yellow onion. Stir to incorperate dressing with the chickpeas and tomatoes. Lightly coat bell peppers and yellow onion with oil or Pam the place on grill. (I use a grill basket where I can stir everything around). Remove after about 10 minutes and add to bowl.
