Here is how you make Easy and Tasty Tomato Sauce:

Place tomatoes (be they beefsteak or cherry) in a single layer in a snug fitting baking dish. Drizzle lightly with olive oil. Just enough to wet fruit lightly all over. Spoon a few teaspoons red wine vinegar over. Place a bay leaf or 2 with the tomatoes. Place baking tray in a preheated oven for 30 mins at 200 degrees celcius or until skins start to blacken here and there.Remove tray from oven and squash tomatoes with a fork. Remove skins. (At this point you could add al kinds of extra ingredients like chopped olives, garlic, chilli, mushrooms, basil etc) Return tray to oven for another 15 mins.And you're done.You could use the sauce as is, mash finely, or even put it through a food processor (It will go a bright orange, but remember to remove the bay leaf.)Can be made in batches and reheated.Makes 4 servingsNumber of Servings: 4Recipe submitted by SparkPeople user ARNOGRAAF.
