1 c. green beans, fresh chopped or frozen
1/2 c. yellow corn, frozen

1/2 c. flour (white or wheat)
1/3 c. cornmeal
1 t. baking powder
1/4 t. salt
1 egg, beaten
2 T. milk
1 T. vegetable oil

Here is how you make Vegetables and Dumplings in the Slow Cooker:

1. Add squash, mushrooms, onion, garlic, can of tomatoes, water, Italian seasoning and pepper to the crock pot. Cover and cook on high for 4-5 hours or on low for 6-8 hours.2. Meanwhile, combine all dry ingredients for dumplings: flour, cornmeal, baking powder and salt; then combine wet ingredients: egg, milk, oil. Add the wet ingredients to the dry ingredients and mix well. I usually add some thyme or rosemary or both to the dough.3. When time is reached on slow cooker, add green beans and corn, stir. Then, drop about tablespoon-sized dumpling dough into the slow cooker (makes about 12-14) and cover and cook an additional 50 min. Do not lift the lid during this time as it slows the cooking process.4. Finally lift the lid and enjoy a hearty and delicious meal!I usually make this at the beginning of the week and take with me to work everyday- so that's why it says 5 servings, but it could probably feed more than that!
