8 servings (about a 1-1/4 cups each)heat oil in a large saucepan ( I use my pressure cooker on brown). Add onion; cook 5 mins. stirring occasionally. Add garlic, carrot, and celery; cook until soft, about 5 mins. Add stock, beans, coriander, cayenne pepper, and vinegar. set pressure cooker to low steam for 1 hour. Or simmer for 10 mins. uncovered. Transfer to a blender or food processor to desired consistency. reheat if necessary. serve in a shallow bowl and garnish with cilantro.
