Here is how you make Red Bean Soup:

Saute chopped onion in olive oil until translucent. Add yams, celery, and chicken broth. Simmer over medium heat 5 minutes or until yam is tender. Add tomatoes and beans. Simmer until warmed through. This is enough to serve 3-4 in my family. I am not sure on what a serving should be, but it is high in fiber and very low in fat. We like to eat it with corn tortillas, but limit to 2 each.
