This recipe makes 5-6 servingsThis is the most efficient way of preparing this soup:1) chop the onion and saute it in 1.5 TBL butter for about 10 minutes2) while the onion sautes, peel and coarsely chop the parsnips and carrots3) when the onion is soft and cooked through, add the parsnips and carrots plus about 5 cups of vegetable broth and 1 cup of water (save the extra broth in case you need it later)4) bring the soup to a boil, then reduce to medium-low setting for about 30 minutes until the carrots and parsnips are tender5) let the soup cool - to puree in a blender (do this in about 4 batches). 6) while the soup cools, take about 1/3 cup of plain yogurt (nonfat or lowfat is acceptable) and add a small amount of milk and stir to a cream-like substance. Add pepper to taste.7) once the soup is completely puree'ed return to heat and add salt to taste.8) for serving, drizzle the yogurt mixture on top of the soup and garnish with fresh parsley or a grilled jalapeno (depending upon your preference).
