1 cup large green lentils
3 quarts of water
2 bay leaves
1/4 cup olive oil
2 medium onions, chopped
2 cloves garlic, finely chopped
1/2 fresh jalapeno* pepper, minced
1 1/2 cups tomato sauce
1 tablespoon tomato paste*
1/2 tablespoon dry mustard
Sea salt
1/4 cup red wine vinegar, or more
1/4 cup chopped fresh dill

[ * I used jalapeno pepper and tomato sauce. The recipe calls for any kind of chili pepper and tomato puree ]


How Do I Make Lentil Soup (Faki)?

Here is how you make Lentil Soup (Faki):

Rinse the lentils and place in a large pot with the water and the bay leaves. Bring to a boil, strain, and discard the water.Add more water and bring to a boil again, then reduce the heat, and simmer for 20 to 30 minutes.In a skillet, heat the olive oil over medium heat and saute the onions until soft, about 3 minutes. Add the garlic and chili pepper, and transfer the sauteed vegetables and cooking oil to the pot with the lentils. Add the tomato puree [I used sauce] and paster and the mustard, stir well, and continue simmering for another 30 minutes, or until lentils are tender, adding a little more water if necessary.Season with salt and vinegar, and remove the bay leaves.
