Makes 7 1 cup servingsSteam potatoes & broccoli pieces in steamer basket for 10 min. or until tender. Puree in blender with 1 1/2 cups of the vegetable stock. Set aside.In a large soup pot, saute onions, garlic and carrots in olive oil for 3-5 min over medium heat. Stirring often. Add lentils, remaining stock, water, pepper, salt and thyme. Bring to a boil, reduce heat to medium and simmer for 15 minutes or until lentils are tender. Slowly stir in the pureed potato/broccoli mixture. Continue cooking for another 5 minutes.
