Here is how you make French Onion Soup - Vegetarian:

1. Heal olive oil in a large pot on med. low. 2. Add onions and black pepper, then cover pot.3. Start the bread - Toast bread cubes on 250 for 20 minutes.4. Stir onions occasionally for 20 -30 minutes until they are caramelized - they should be soft and turning to a caramel color. 4. Then add soy sauce. Start with 2 Tbsp, add more to taste5. Add water6. Simmer for at least 15 minutesAssembly: put bread crumbs in the bottom of the bowl, Ladle the onions and put a whole lot in each bowl. The bread will soak up a lot of the broth, so add more until it almost cover the onions. Put one slice of cheese on top, then cover until cheese is completely melted - about 5 minutes. Enjoy!
