The ingredients for Dee's Potato Soup are:

2 T Smart Balance Omega Butter Spread with Olive Oil (or butter or margarine of your choice)
12 oz can fat free evaporated milk
2 cups vegetable broth
1 T flour
1 T minced garlic
1 large onion, chopped
2 stalks celery, quartered lengthwise and chopped
7 large red potatoes (around 150 g each), half peeled, half unpeeled, cut into 1/2-3/4" pieces
1.5 tsp garlic powder, or to taste
1/4 tsp black pepper
2 cups water
1 can reduced sodium cream of mushroom soup
1 can 98% fat free cream of celery soup
1 cup reduced fat shredded cheese of your choice (I used great value fiesta blend)


How Do I Make Dee's Potato Soup?

Here is how you make Dee's Potato Soup:

In a large pot over medium heat, add butter and garlic. Cook about 1 minute. Add onions and celery, cook about 5 minutes. Add flour, stirring well and scraping bottom of pan to prevent scalding. Add broth and evaporated milk, stir well. Add potatoes and water, ensuring that liquid is enough to cover top of potatoes. If not, add enough water till adequate. Increase heat to high and bring to a boil. Cover and reduce heat to medium low, and stirring occasionally to prevent sticking, cook for 20-30 minutes, till potatoes are tender. Remove lid, reduce heat to low. Using a potato masher, slowly mash potatoes in pot till they're mashed into very small chunks, or at preferred consistency. This will help to somewhat thicken soup. Add both cans of cream soup, garlic powder, and pepper. Stir till well bended. Finally, add shredded cheese and stir slowly till cheese has melted completely into soup. Remove from heat and serve. Top with preferred toppings, such as chopped scallions, bacon bits, sour cream (toppings not included in nutritional info).*Makes about 11.5 1-cup servings.
