Here is how you make Susan's Veggie Rice Soup:

In canola oil cook down celery, onion, and carrots. Then add mixed veggies, tomatoes, drained beans, spinach, broth, water, brown rice and stir. Then add spices and seasonings to taste. Bring to a boil then simmer on low. I planned on 5 lunches but will easily make more. You will get slightly different calorie, sodium and fiber counts depending on what products you use.
