1 lb Whole Wheat Spaghetti
10 New Potatoes, cut into quarters
1 C Sun Dried Tomatoes (not in oil), cut into small pieces



How Do I Make "Irish" Spaghetti?

Here is how you make "Irish" Spaghetti:

Combine the basil, garlic, and pine nuts in a food processor and process until finely chopped, gradually adding the oil as the mixture is chopped. Transfer to a small bowl and stir in the cheese, and lightly season with a little salt and pepper.Steam the green beans until almost tender, 6 - 7 minutes. Remove from pot and set aside.Cook the pasta in a large pot of boiling water for 5 minutes. Add the potatoes and cook until the pasta is al dente and the potatoes are tender - 7 - 8 minutes more. Drain well, reserving 2 TBS of the cooking liquid.Put the pasta and potatoes into a large serving bowl and stir the reserved cooking liquid into the basil pesto. Pour the pesto into the pasta and potatoes, add the green beans, and toss well. Season with black pepper to taste.
