Here is how you make Spanakopita:

1. Preheat oven to 180c2. Using either spray olive oil or olive oil and a pastry brush, grease a shallow baking tray3. Lay a single sheet of pastry and brush or spray with oil. Repeat until there are 6 sheets, with at least 10cm of pastry hanging over the edge of the tray (this will be the 'lid')4. Dice onion finely5. In a bowl, combine all filling ingredients throughly.6. Scoop filling into the pastry, and fold the excess edges of pastry over the top. Do this one layer at a time completely covering the top and brushing with oil between layers as you did with the base.7.
