1 red bell pepper, sliced thinly
1/4 c peanut butter
4 scallions
2 T fresh cilantro, chopped
1 cup bean sprouts
1/4 c soy sauce or tamari (if gluten free)
juice of 1-2 limes
1 T raw sugar or brown sugar or palm sugar
extra virgin olive oil

Bring some water to a boil and add the noodles, cook per package directions. Drain.While noodles cook, fry diced tofu in a wok/pan until golden and set aside. Loosely scramble the eggs and set aside.Saute onion, garlic, ginger and bell pepper. Stir fry for 2-3 minutes. When the onion is soft, put in the peanut butter and mix well. Stir in the noodles.
