3 cloves of garlic, crushed and chopped
ground black pepper
1 egg, lightly beaten
8 sheets filo pastry

Preheat oven to 180deg C.Cook onion in butter until cooked but not brown. Add spinach, mushrooms and garlic and cook until pan is dry - taking out sall the moisture from the spinach.Mix ricotta, feta, cheese, nutmeg into the spinach. Add salt and pepper to taste then add the egg.Stack up 8 sheets of filo (with melted butter or spray between each sheet) and pour spinach mixture into a log shape in the middle longways. Roll up the filo around it loosely and place on baking tray.
