120g spinach leaves, washed
200g feta cheese, cubed
100g double cream
6 large eggs

Here is how you make Feta, Spinach and Caramelised Onion Omelette:

Peel the onions and slice thinly. Melt the butter in a large frying pan and add the oil and the onions. Cook over a low heat for 20 minutes until the onions are soft, stirring regularly. Add the onions and stir until the spinach has wilted (about 2 minutes). Add the feta and spread out evenly. Break the eggs into a bowl and beat them with a little black pepper.
