1 1/8 cup whole wheat flour
1/2 cup lukewarm water

For toppings:
1/4 cup pizza sauce
2 cups fresh baby spinach or 1/2 cup frozen (thawed & drained)
1/4 small red onion ( I used a leftover shallot...so less calories)
1 cup part-skim mozzarella cheese
1 1/4 cup sliced cremini mushrooms (button)
35 g soft goat cheese ( or 1/4 cup part-skim ricotta)
2 tbsp grated parmesan ( I shredded it)
1 tbsp extra virgin olive oil
can also drizzle 2 tsp balsamic vinegar - I didn't

Here is how you make Whole Wheat Spinach-Mushroom Pizza:

For dough: Proof the yeast with sugar and lukewarm water. When it's doubled add the flour and knead into a ball. Let dough double in size in a warm, draft-free area. When doubled form into crust.Spread crust with pizza sauce, followed by the spinach and onion. Sprinkle with the mozzarella and mushrooms. Dollop the goat cheese (or ricotta) over the pizza and sprinkle with parmesan. drizzle with olive oil.Bake in a preheat 400 f oven until crust had browned and puffs up a bit.
