Here is how you make Cumin Butternut Squash Chickpea Burgers:

Preheat oven to 400 degrees F.Cut squash into cubes and spread out on a baking tray lined with parchment paper or silpat. Roast until golden and soft and just starting to caramelize (about 40 minutes or so), turning over halfway through. Set aside and let cool a bit.Once cool put squash in a food processor and pulse until chopped into very small pieces 10 - 15 pulses. Then add chickpeas, garlic, lemon juice, egg beaters, seasonings and pulse until a dough starts to form.Transfer mixture to a bowl, add in nutritional yeast a little at a time, and knead by hand until dough can be formed into patties. Form dough into patties and place on a parchment lined sheet / plate. Chill in fridge for at least 1 hour.Preheat oven to 350 degrees F. Line a baking sheet with parchment or silpat, add patties and bake on the center rack for 20 - 30 minutes, flipping halfway through, until burgers are browned.Serving Size:?9 Burger Patties
