Here is how you make Vegan Vegie Stew:

Saute onions, bell peppers, garlic, celery in coconut oil (can substitute olive oil if desired) till onions are translucent. Add water or vegie broth, then add all other ingredients and simmer with seasonings to allow tastes to meld until carrots are tender. I usually use a vegetarian chicken-like or beef-like broth for this soup for flavor. Makes six servings of 1 c. each.
