1 cup cooked rice
1 individual serving size baby carrots, sliced
1 cup raw spinach, chopped
1/4 large onion, diced
1 Tbps minced garlic
2 eggs, beaten
salt & pepper to taste (I only used pepper)
Splash of beef broth (not calculated in recipe)



How Do I Make Quick Stir Fry?

Here is how you make Quick Stir Fry:

Saute carrots and onion until tender; add minced garlic and saute a few more minutes. Add spinach and saute until wilted. Add cooked rice and saute until hot. Add a splash of broth (beef, vegetable, chicken... your choice) if needed --I added it because my rice was a bit dry going in. Pour beaten eggs over the rice and saute until cooked through. Add salt & pepper to taste. Serving Size:?Makes 1-2 servings
