1 cup chopped mushrooms sauteed in 2 T butter
3 cloves garlic, minced

Preheat oven to 350 degrees (F).Spread 1/2 cup of red sauce into the bottom of a greased 9?9 inch baking dish.Combine ricotta and the next 10 ingredients in a medium sized bowl. Stir well, to combine.Spoon filling into shells. Arrange the shells in the prepared dish. Top with the remaining red sauce. Cover with foil and bake for about 30-40 minutes. The last ten minutes of baking, uncover the pan, sprinkle with a handful of your favorite cheeses, then return (uncovered) to the oven until everything is melted, bubbling, and smells amazing.Remove from oven, let stand for five minutes.This is one of our favorite meatless meals-hearty and filling with a good for you punch of spinach.
