Here is how you make Mushroom Stuffed Ravioli:

Carmelize onions, chop and cook mushrooms. Combine the two into one pan, turn heat to low, add heavy cream and fontina cheese, continue stirring until cheese is melted and incorporated into the mix. Grate Parmesan and mix in. Put mixture into a food processor or blender and pulse until all bits are finely minced (the mushrooms should resemble ground beef). Put into a bowl and cover, refrigerate until mixture has cooled and thickened.Stuff the wonton wrappers with 1 tsp of the mixture, top and seal with a second wonton. Cook in boiling water for 3 minutes, or until the ravioli floats.Can be frozen - lay flat on a cookie sheet sprayed lightly with oil or non-stick spary. Set in freezer for about 20 minutes.
