Here is how you make Quinoa Stuffed Poblano's:

cook quinoa according to package (can use a rice cooker - 2 parts water to 1 part quinoa)spray a pan with pam and saute vegetables (onion, corn, and black beans while quinoa cookson grill cook shrimp (or add to sautee pan with veggies) and roast peppers for 5-10 minutes until skin starts to seperatelet peppers cool - cut of top of pepper and remove skin and seeds (may want to use gloves for this - avoid contact with your eyes)mix shrimp, quinoa, veggies and 1/2 of cheese together. Stuff peppers with mix. place peppers in a baking dish and cover with tomato sauce or salsa (could also use enchilada sauce) and top with remaining cheese.
