This is a quick, super-healthful, low-fat, delicious meal for one. I came up with this idea because I had next to nothing to make myself for dinner today, and I was in a hurry. I don't particularly care for cottage cheese or sweet potatoes, but somehow I came up with this idea anyway, and it was like ambrosia to me. Something about the seasoning just made everything taste yummy! If you're watching sodium, use garlic powder instead of garlic salt, and I'm sure it will be just as good. Remember, this is a whole meal, not a side dish! Believe me, I ate it 3 hours ago, and still feel satisfied!

Here is how you make Cheesy& Savory Sweet Tater:

Take one medium to large sweet potato and wash it well. Do not peel. Slice it in half,length-wise. Stab it several times on both halves, and microwave covered, skin side down (preferably in the same dish you will use to eat it) for 7 minutes or until soft. Carefully remove dish with potholder (it will be hot!), and immediately sprinkle seasonings evenly on the potato. Then, while it is still steaming, plop your cottage cheese on top, and mash it in, mixing the seasonings, sweet potato flesh, and cottage cheese altogether. The cold of the cottage cheese then makes it possible to eat it immediately. There is something about this combination that makes the cottage cheese not taste as much like cottage cheese, and the sweet potato not taste as much like sweet potato, and the whole thing is so much more delicious than it sounds!
