4 large fresh bell peppers
8 ounces shredded sharp cheddar cheese
3/4 t cumin
1 t chili powder
1 onion
1 can of black beans
1 T vegetable oil
1 can diced tomatoes
1 small can tomato paste


How Do I Make Cheesy Stuffed Sweet Peppers?

Here is how you make Cheesy Stuffed Sweet Peppers:

Wash and remove tops from peppers. Dice onion and sautee in the oil until soft. In a large bowl, combine the cheese, cumin, chili powder, sauteed onions, and 1/2 can of the beans. Stuff each pepper with this mixture. Place the peppers in a pot so that they are standing upright. Combine the tomato paste with enough hot water to make a sauce. Pour the diced tomatoes, tomato sauce, and the rest of the black beans over all. Make sure the sauce comes to the tops of the peppers to help cook them. Bring to a boil, then simmer for about 30 minutes. The peppers will be cooked, but not soft and mushy.
