1 package silken tofu
3 tbsps chopped onion
1/2 cup chopped red pepper
1/2 cup sliced zucchini
1.5 cups mushrooms chopped/sliced
3/4 cup frozen spinach
1/2 tsp canola oil
1 tsp oregano (or italian blend)

Sauce:
2 tbsps soy sauce
2 tbsps hot sauce (franks or chili/garlic - I used franks red hot chili/lime)
1 tsp dijon mustard (I used garlic mustard)
1-2 tbsps water
(sometimes I add some turmeric too, if you want your tofu to have that yellow eggy tint?)

Here is how you make scrambled tofu and veggies:

Although it says prep time of 60 minutes - most of that is just draining the tofu. Wrap it in cheesecloth and press out the liquid or hang up to drain. Chop veggies. In frying pan over medium heat, cook onions in oil. Add peppers, zucchini, mushrooms. Add spinach. Use any veggies you like actually. While veggies are cooking make the sauce with the soy, hot sauce, mustard and a couple tbsps of water. Add oregano to the cooked veggies, then a bit of the sauce.
