Makes 1 very hearty serving1. Heat non-stick skillet (med high). 2. Add just enough olive oil to lightly coat skillet.3. Break tofu into small pieces and add to hot skillet.4. Cook until tofu releases water to desired consistency and turns a light golden brown.5. Add nutritional yeast and minced onion. Stir to coat tofu.6. Add drizzle of olive oil followed by garlic, sliced onions, and mushrooms. Cook until tender.7. Add spinach and cook until wilted.8.
