This recipe serves two people.Wash and peal the potatoes. Chop in to cubes about 1cm cubed.Put all the potatoes in a pan and cover with water. Boil on hob over a maximum flame for 10 minutes.Whilst the potatoes are boiling prepare the other vegetables.Dice the pepper into chunks about 1centimeter squared. Chop the onion into small chunks,Empty the can of tomatoes and the can of kidney beans into a bowl.Add the chopped vegetables to the bowl.Peal the garlic and using a garlic press crush it into the bowl.(Alternatively, if you do not have a garlic press you can chop the garlic very finely with a vegetable knife)Mix the ingredients together gently.When the potatoes have boiled pour them in to a colander over the sink to remove any water.Replace in the pan and add the bowl of canned and chopped vegetables.Replace over maximum flame for five minutes, stirring as often as possible - DO NOT BOIL.Simmer over a minimum flame for 2-5 minutes.Serve and enjoy.
