Preheat nonstick griddle to 325F. Mix dry ingredients in one bowl. In separate bowl, mix wet ingredients and veggies, making sure veggies are completely coated. Add dry ingredients to wet, incorporating completely. Spoon mixture onto hot griddle, flattening slightly if needed.
