pack of baby button mushrooms, cleaned and left whole (160g)
2 cans chopped tomatoes
1 can red kidney beans, drained and rinsed
1 can black-eyed beans, drained and rinsed
100g tomato puree
1 tbsp cumin powder
1/2 tsp black pepper
1/2 tsp chilli powder (or to taste)

Heat oil in a large saucepan and fry chopped onions for a couple of minutes. Add peppers and courgettes, stir, and continue to cook on a medium heat for 5 minutes. Add mushrooms and cook for a further 5 minutes.
