Here is how you make Spicy Vegetable Quinoa:

Makes about ten 1-cup servings.Bring 4 cups water or chicken stock (preferred for flavor) to a boil. Add quinoa, cover*, and let simmer about 15 minutes or until fluffy and dry. Do not stir while cooking. *Meanwhile, heat Niter Kibbeh in a large wok pan over medium-high heat. Add garlic and cook until fragrant. Add onions and peppers. Cook until onions are translucent and peppers are soft. Add peas, corn, and Berbere spice mixture and cook until frozen veggies are warmed throughout. Mix in quinoa and remove from heat. Serve warm.
