2 cups power greens
1/4 yellow pepper, sliced in thin strips
1/4 red pepper, sliced in thin strips
4 spears asparagus
1/4 mango, sliced in thin strips
? green apple, sliced in thin strips
3 oyster mushrooms
4 spears broccoli in bite-sized pieces
1/2 c. cauliflower in bite-sized pieces
? carrot, sliced
2 TBs. dried cranberries
1/3 c. walnut halves
1 Tb olive oil
1 TB balsamic vinaigrette
1-2 tsps. dried tarragon
Salt and Pepper to taste

Here is how you make Dave's Veggie Bake:

Preheat oven to 400 degrees. Spritz a baking sheet or baking stone (9 x 13?) with a little of the olive oil. Sprinkle lightly with salt and pepper. Spread a layer of the Kale on the sheet, then cover with a layer of the chard. Sprinkle lightly with balsamic vinaigrette, salt and pepper. Then layer the veggies, fruits and nuts in the order given above, sprinkling with the oil and vinaigrette, the tarragon and Salt and pepper at least 2 more times (Final time after the last layer). Bake at 400 degrees. Take out and stir thoroughly before serving. Serving Size:?Makes 3-4 servings
