*2 cloves garlic, minced
*1 tablespoon oregano
*1 teaspoon basil
* Salt and pepper to taste
*2 cups part-skim mozzarella, divided
*1/4 cup parmesan cheese


How Do I Make Veggie Penne Bake?

Here is how you make Veggie Penne Bake:

1) Preheat oven to 350. Spray bottom and sides of a 13"x9"x2" baking pan with non-stick cooking spray.2) Cook pasta according to package directions.3) While pasta is cooking, place eggplant, onion, green pepper, mushrooms, garlic, oregano, basil, salt and pepper in a skillet. Drizzle with olive oil and sautee over medium heat until vegetables are tender. 4) In a large mixing bowl, combine pasta, vegetables, spaghetti sauce and half the cheese (1 cup).
