2 cup, pieces or slices Mushrooms, fresh

How Do I Make Veggie Breakfast Egg Bites?

Here is how you make Veggie Breakfast Egg Bites:

Dice veggies. Sauté veggies in olive oil on medium low heat and add your choice of seasoning. I use Sazon or Fiesta Ranch powder. While spinach is cooking, beat eggs and add in milk then crumble in goat cheese. Once veggies are done cooking mix them into the eggs. use 1/4 cup measuring cup to ladle mixture into muffin pans ( I prefer a silicone pan otherwise grease a metal pan well otherwise the eggs won’t release easily). Bake at 350 for 17-20 minutes. Let cool, then use a spatula to scoop out of pan and serve or divide into serving size containers and store in the fridge for an easy grab and go breakfast in the morning.Serving Size:?Makes 24 muffins or 8-12 servings
