Here is how you make Veggie Stir-Fry with Purple Sprouting Broccoli:

Wash the quinoa. Add the 2 cups of vegetable broth and quinoa to a pot. Bring to a boil and then turn down the heat and simmer until all the liquid is absorbed.Put 1 Tbsp olive and 1 tsp sesame oil in a large frying pan or wok. Add the 3 cloves of garlic, 1 tsp of grated fresh ginger, 1/4 cup scallions and onion. Sautee for a few minutes. Begin to add the remaining vegetables - Asparagus, carrots, parsnip, zucchini, shiitake mushrooms, purple sprouting broccoli, frozen spinach and frozen kale. Cut the tofu into cubes and add to the vegetable mixture. Add 2 tbsp of vegetable broth, 8 tbsp low sodium soy sauce and 1 tsp Sriracha. Sautee a few minutes longer - don't let the vegetables get too soft.
