This is an Ovo-Lacto-Vegetarian recipe.There is LOADS of possibilities in the recipe.As always, try and use organic, fresh food for your meals!!!This recipe can be added to for a variety of different flavors. I have fried these and I have also baked these patties. I believe I enjoy the consistent results of baking. It is hard to get the fried ones to not burn, yet cook all the way. I have included the directions for both ways. Also...this recipe makes about 16 patties. I bake up lots of these guys and freeze some of them for a super quick dinner. There is a lot of prep time...but remember this is for a very large batch...you can always cut the batch size down. Before you start this recipe make sure you have enough time...as you need to place the mixture in the refrigerator for an hour or so to "set up".

The ingredients for BEST (Healthy) Veggie Burger Ever!!! are:

Crush up 6 cloves of garlic and place in a very large non stick skillet/pan. Grate 1 large red onion and add to the skillet. Heat up 1/2 teaspoon of organic extra virgin olive oil (I actually just use a spray oil) in the skillet over low heat, and cook the onions and garlic until tender... 4 minutes or so.
Now mix in:
4 carrots (grated) - about 4 small carrots
1 medium zucchini (grated) - about 2 1/4 cups
2 small summer squash (grated) - about 2 1/4 cups
1 cup of broccoli (cooked and puree in a blender or
food processor...you may omit this as it takes
additional prep time.)

Continue to cook and stir the above ingredients for an additional 5 minutes. Remove the pan from the heat and stir in...
2 1/2 cups of rolled oats
1 cup of reduced fat cheddar cheese
4 egg whites
4 tablespoons of Hoisin sauce (lite soy sauce can be
in place of)

Now you will need to place the mix in a ceramic or glass bowl and let it cool off for a few minutes and then cover and place in refrigerator for about an hour.

Mix the 2 flours (1/2 cup of whole wheat flour and a 1/2 cup of white flour) and 1/2 cup of oat bran in a large plate or bowl. Form the veggie mixture into 16 patties...making them as round as possible. Pat the patties with the flour mixture, lightly coating both sides. (the patties will be kind of sticky before you coat them with flour)

Now you have a choice. You can put a little oil in a pan and fry them up or you can proceed to the baking directions.

One of my sons liked these and the other one... ever- so- politely asked me to "not make them very much." :-(

I really like them and I will continue to make them as a quick re-heat dinner for myself and hubby. My daughter has not tried them as of yet...I am keeping my fingers crossed.
