Here is how you make Southwestern Veggie Burritos:

Preheat the oven to 400. Mix all the spices together in a small bowl. Place the cubed butternut squash in a separate small bowl. Add a tsp of the olive oil and 2 tsp of the spice mixture to the bowl of squash; toss. Spread the seasoned squash onto a cookie sheet and bake for 20 minutes.Heat the rest of the olive oil in a large skillet and add the onions, zucchini, mushrooms, bell pepper, and half of the spice mixture. Cook for 5 minutes, then add the beans, corn, tomatoes and the rest of the spices. Cook thoroughly for another 5 minutes.Serve warm, spooned into the tortillas, and sprinkle with cheese.
