Slice peppers into strips and onion into slices; add to skillet. Cook until veggies are softened, about 10 minutes. Add spinach and cook 2 minutes more. Remove from pan into a bowl and add half the cheese. In same skillet, pour in 1 cup broth and the red pepper soup. Let boil while adding 1 tsp. each: chili powder, cumin, onion and garlic powder. Reduce heat to simmer and cook 3 minutes. Turn off heat. Put about 1/3 cup of veggie- cheese mixture into each tortilla on one side. Roll up tightly and place sea-side down into sauce in pan. Spoon some sauce over tortilla. Repeat with all 5. Sprinkle rest of cheese over enchiladas and place pan in oven. Bake at 400 degrees for 15 minutes. Let stand 5 minutes before serving. Remove avocado flesh from skin and mash. Add juice of 1/2 lime and 1/4 cup Salsa and mix well.
