1/2 c. Seitan, chicken-style by Westsoy, in small chunks (.5" or less)
1/2 tsp Dill weed, dried
1/4 tsp Thyme, ground
1/3 tsp Oregano, ground
1/8 tsp Coriander leaf, dried
6-7 sprays Olive Oil Spray
Salt & Pepper to taste
2 Tbsp Water

Here is how you make Veggie Fried Taters with Seitan:

Heat large frying pan on medium-high heat. Spray liberally with olive oil spray.Saute onion and garlic for 1 minute, then add carrots and celery. Saute for 1 minute, then add water and cover to steam for 2-3 minutes. Add mushrooms and seitan. Spray liberally with olive oil spray, turn heat to high, and saute, stirring frequently, until browned (about 2 minutes). Add zucchini, diced potatoes, spices, and another spray of oil.
