Finely dice the onion and the celery and put into the pan along with the garlic. Saute until onions begin to go translucent then set aside. - Finely grate the parsnip, carrots, zucchini and cheese into a large bowl. If you do not have a parsnip then just add in another carrot. Use a sharp cheese like an old cheddar, or parmesean/romano for more flavour. - Add the egg to the shredded ingredients along with the worchestershire sauce, liquid smoke and hot pepper sauce. Mix well to combine, then add the sauted onion/celery/garlic mixture and combine again (add this mixture last just in case it's still hot, you don't want to cook chunks of the egg). - Add the flour, corn meal, pepper, dill, salt and thym to the mixture and stir well (you may want to dig in with your hands at this point). - Add enough of the oil to a large frying pan just to coat the bottom and heat over medium for approximately 5 minutes. - Form 2 1/2 tbsp of the fritter mix into a patty with your hands (HINT: you can fit more ovals into a pan than you can circles) and place carefully into the oil. Continue to place fritter patties into the oil until you have them relatively close together - the closer they are, the less of the oil each patty will absorb. - Each patty will need to fry for 5-7 minutes (until golden brown). Flip carefully once, fry on the other side for another 5-7 minuntes, then place on paper towel to drain. - Continue to coat the pan with oil and fry the patties until done. This recipe should make about 32 patties, there are 4 patties per serving (8 servings)Serving Size:?Makes 8, 4 fritter servingsNumber of Servings: 8Recipe submitted by SparkPeople user MYARTEMIS13.What's The Nutritional Info For Veggie Fritters? The nutritional information for Veggie Fritters is:
