Here is how you make Veggie Loaves:

Saute cauliflower, leeks, celery, 1 yellow pepper, and garlic in the butter & olive oil.Add bullion cube, veg stock packet, and spicesDeglaze pan with Marsala, reduce by half & add 1/8 cup water...turn off heat & let cool. Add all remaining chopped / uncooked veg to a large mixing bowl, and mix in cooled veg saute. Combine, and then add whisked eggs & bread crumbs. Spary your mini loaf pans with canola spray or otherwise & add mixture (form in to large eggish shape to help it keep shape). Cook at 375 degrees for 35-45 minutes. Let cool for 5-10 minutes in pans, and then remove to cooling rack to keep crisp outside edges.
