1 can (14.5-15.5 oz) Black Beans, rinsed, towel-dried
2 cups Oatmeal, coarsely ground
3/4 cup Almonds, ground
3/4 cup Walnuts, ground
1 Medium Red Bell Pepper, finely diced
1 Large Onion, finely diced
5 cloves Garlic, minced
1/2 cup Bread Crumbs (could also make homemade)
1/2 cup Skim Milk
1/2 cup Egg Substitute (= to 2 eggs)
2 Tbsp Ground Flax Seed (mixed w/6 Tbsp warm water to make Flax "eggs")
2 Tbsp Hot Sauce
1.5 Tbsp Chili Powder
1.5 Tbsp Cumin, ground
1 tsp dried Basil
1 tsp dried Cilantro (or sub 1/4 cup fresh)
1 tsp Coriander, ground
1 tsp Paprika
1 tsp Sea Salt
1/2 tsp Black Pepper, freshly ground
1/4 tsp Cayenne Pepper


How Do I Make Ultimate Mexican Veggie Burger?

Here is how you make Ultimate Mexican Veggie Burger:

In a small bowl, combine 2 Tbsp Ground Flax Seed with 6 Tbsp warm water. Mix and set aside (FYI - mixture will thicken to the consistency of egg whites and can be substituted for eggs in baking and other recipes - in this recipe you may also use either all egg substitute, or all flax "eggs")Mash Black Beans with a fork and place in a large mixing bowl.Process next three ingredients (Oatmeal, Almonds, Walnuts) in a food processor (Oatmeal should be coarse, Nuts fine - nuts may also be interchanged for all of one type or a mixture of other types of nuts). Add to mixing bowl.Finely dice Peppers & Onion. Mince Garlic. Add to mixing bowl.Add all remaining ingredients to bowl and combine using a spatula or wooden spoon.With wet hands, form 12 extra large meatballs (mixture should be reminiscent of a meatloaf or meatball mix). Place "meatballs" in a freezer safe dish leaving plenty of space in between each meatball (4 each will fit in two round cake pans, the 3rd four can be placed in a square baking dish, like a brownie pan, for a total of 12). Cover with plastic wrap, and flatten patties using the bottom of a glass. Place pans in freezer for at least an hour to allow burgers to set up. The round pans can stack upon one another.When ready to eat, allow burgers to sit at room temperature for 5-10 minutes (but no longer). Oil grill grate, or a grilling tray. Heat grill to medium heat. Place burgers on the grill and cook for about 6-8 minutes per side. Serve on whole wheat buns with your favorite burger toppings.
