Here is how you make Lana's Microwave Veggie Omelet:

Lightly coat a 2 cup microwave safe bowl with Pam. (About 1/3 of a sec. spray). Break 2 eggs into bowl and add 1 Tbsp of skim milk - scramble. Add chopped spinach, tomato, and onion and scramble until all vegetables are well-coated. Microwave on high for 1 minute. Remove and stir again. Return to microwave on high for another minute. Remove and sprinkle one tablespoon of your favorite shredded cheese on top. Let sit and your cheese should melt - or return to microwave for 10 sec.
