Here is how you make Orzo-Veggie Vat:

Makes six 1 1/2 cup servings.Set a large pot of water to boil. Add orzo and cook according to package directions.Thaw frozen veggies (corn, broccoli) in microwave according to package directionsMeanwhile, heat 2 tbsp olive oil in a large nonstick pan over medium heat. Add chopped garlic and heat for 2 minutes. Add spinach, red pepper flake, and chicken broth; stir to combine. When spinach is mostly thawed, add garbanzo beans, corn, and broccoli. Stir, then add wine, and season with salt and pepper. Once wine has cooked down, add lemon zest and the juice of half the lemon. Stir and set to a simmer until pasta is done.Drain pasta and return it to the pot. Add one tbsp olive oil and the juice of the other half of the lemon. Stir, then add the veggie mixture.
