2/4 cup Parmesan cheese, shredded
4 ounces of Swiss cheese,shredded
2 deep dish pie crusts
8 eggs, beaten
Summer squash,chopped
2 carrots, peeled and chopped
red onion,chopped
4 cloves garlic, finely chopped
one tablespoon extra virgin olive oil
3 cups non fat milk
salt and pepper to taste
1 tsp cinnamon

Here is how you make S&G's Fresh Veggie Quiche:

Prepare pie crusts as instructed. Chop up veggies. Saute in a skillet with a little olive oil. Allow to cool before putting in with egg mixture. In a bowl, mix eggs, milk and seasoning. Add veggies and cheese and mix together well.Pour the mixture evenly into the pie crusts. Bake at 325 degrees for about 45 minutes. Once done, allow to cool for a few minutes before serving.
