Here is how you make Quinoa Veggie Cakes:

Spray a large skillet with Pam, and saut? the onion and spinach, with a dash of salt and pepper, until soft. While spinach is cooking, combine the rest of the ingredients (except olive oil) in a mixing bowl. Once the spinach is cooked and cooled, add to the bowl and mix thoroughly. Let sit for 5 minutes for the oats to absorb. In same skillet, heat up EVOO ( a little for each batch you cook). Divide mixture into 15 patties and saute until golden brown on each side, 4 at a time (or more if you have a very large skillet, but try not to over crowd the pan) (aprox 3-4 min each side)Serving Size:?Makes 15 cakes
